A smooth green gazpacho! Eaten right away the soup remains sweet from the honey, once its cooled, the veggies come through loud and clear
Ingredients:
2 avocados, diced
1 cucumber, diced
3 medium tomatoes, diced
1 garlic clove, minced
1 jalapeno, minced
1 -2 lemon, juice of
1 tablespoon honey
sea salt, to taste
1/2-3/4 cup water, depending on how thick you would like it
4 -5 mint leaves (optional)
Directions:
1. Put everything into the blender and blend until smooth, about one minute. Garnish with additional mint leaves.
2. Eat at room temperature for a sweeter soup or chill until cold.
