Ingredients:
1/4 cup flour
1/4 tsp kosher salt
2 large eggs
1 1/2 cups panko (jjapanese bread crumbs )
2 ripe avocado
canola oil to fry
coarse salt to sprinkle
Directions:
1. Heat 1 1/2 inches oil in pot until 375F
2. heat oven to 200F
3. In bowl whisk flour with 1/4 tsp kosher salt
4. Place Panko in another bowl
5. Place eggs ( whisked ) in another bowl
6. Peel, pit and slice avocado into 1/2 inch wedges
7. Using one wedge at a time, dredge in flour, shake off excess, coat in egg and then in Panko crumbs
8. Set wedges aside in a single layer
9. Fry 1/4 of the wedges at a time in hot oil until deep golden about 30 to 60 seconds
10. Drain on toweling paper
11. Transfer fried wedges to oven safe plate and then into warm oven repeat with remaining wedges
12. sprinkle Salt to taste prior to serving
