This is a nice and refreshing salad that is extremely good on a hot summer day. Easy to make yet heavy on taste. Enjoy
Ingredients:
1/4 cup white vinegar
2 tablespoons fresh lime juice
1 teaspoon dijon style mustard
1/4 cup olive oil
4 ripe avocados
4 ripe papayas
2 sprigs cilantro chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
1. Whisk together vinegar, lime juice and mustard.
2. While whisking vigorously drizzle in the olive oil.
3. Cut avocados and papayas in half.
4. Remove and discard seeds and scoop out flesh.
5. Mix papaya and avocado together in a bowl and toss in dressing with the chopped cilantro.
6. Season with salt and pepper the garnish with lime wedges and additional cilantro sprigs.
