This is another recipe I found . I saw this recipe title on a banner ad and thought it looked good so I went looking for it.I haven't tried this yet. The original recipe called for toasted walnuts but I don't like walnuts so I am substituting toasted almonds. The dressing recipe is in the salad recipe.
Ingredients:
1/2 large avocado, peeled, seeded and sliced
1 cup blueberries
1 cup apple, diced
1 cup mango, diced
4 cups mixed baby greens
1 tablespoon chopped green onions or 1 tablespoon chives
1 tablespoon toasted almond, coarsely chopped
avocado, and blueberry dressing ingredients
2 tablespoons honey
1/4 cup plain nonfat yogurt
1/2 teaspoon ground cinnamon
1/4 cup fresh orange juice
1/8 teaspoon salt
1/8 teaspoon white pepper
Directions:
1. Toast almonds by placing them in a dry skillet over medium heat, stirring occasionally about 7 minutes or until they start to brown slightly.
2. Remove from heat.
3. Let cool and coarsely chop.
4. DRESSING RECIPE.
5. In medium bowl, mix honey, yogurt and cinnamon together until smooth and creamy.
6. Whisk in juice.
7. Stir in salt and pepper.
8. Taste and adjust seasonings if needed.
9. SALAD RECIPE.
10. Place sliced avocado, blueberries, apple and mango in medium bowl and toss with 4 Tbsp dressing.
11. Set aside.
12. Toss greens in a large bowl with more dressing (amount depends on how dressed you like your salad).
13. Divide greens between 4 salad plates.
14. Place an equal portion of dressed fruit/avocado mixture on top of each greens serving.
15. Sprinkle with chopped green onions and toasted almonds to serve.
