Avacodo And Goat Cheese Dip

goes good with just about any meal and can be as spicy as you want it to be
Ingredients:
2 large avacodos
1 large pkg goat cheese (8 oz.)
1/4 large red onion fine choped
3 cloves garlic fine chopped
1 shallot chopped
1 tsp cajun spice
1 tblspn garlic salt
3oz cilantro fine chopped
sliced almonds
juice of 1 lime
fresh ground black pepper
2 tblspn olive oil
(optional 1 hot red chili pepper or more )
1 pkg mixed color bell peppers or 3 red bell peppers
raspberry balsamic vinegar
Directions:
1. allow cheese to come to room temp
2. peal and seed avacodo and cut to smaller pieces
3. add every thing else except bell peppers and balsamic vineger
4. combine in bowl, mash and mix until a smooth consistancy is achived
5. blanch bell peppers in boiling water for 2 min
6. slice and core peppers
7. place pepper strips on cookie sheet
8. roast in oven 20 min at 400
9. remove from oven drizzle with rapsberry balsamic vinegar
10. serve with your favorite crackers
