Avacado And Mango Salad

This salad is refreshing and light. It goes well with bbq meats and fishes, asian skewers or tofu steak.
Ingredients:
1 green mango, peeled and cut into matchsticks
1 avocado, peeled, pitted and cut into matchsticks
1 carrot, peeled and cut into matchsticks
1/2 small red onion, sliced
1 small jalapeno pepper, seeded and minced
1 tsp of dried red pepper flakes, smashed
16 large mint leaves, chopped
2 tbsp olive oil
2 tbsp lime juice
1 tbsp honey
salt and pepper to taste
butter lettuce cups, washed
Directions:
1. Place mango, avocado, carrot, onion, jalapeno and mint in a salad bowl.
2. Whisk olive oil, lime juice, honey, pepper flakes, salt and pepper.
3. Pour over salad and mix.
4. Let sit for 30 minutes and serve over butter lettuce cups.
