Autumn White And Green Bean Soup

Full of veggies and beans, great source of fiber and good proteins from beans. Contents tummy and soul.
Ingredients:
4 tbsp olive oil
2 garlic cloves
2 leeks
2 green onions
3 carrots
1/2 pound green beans
1 pound cabbage
1 can white beans
2 cups vegetal broth
1/2 pound fresh spinach leaves
1 tsp sweet paprika
1 tsp hot paprika
2 tbsp fresh parsley
olive oil for drizzle
Directions:
1. In a shallow pan heat olive oil and add garlic, leeks and onions till transparent. Do not brown. Add chopped carrots, beans and cabbage. Bring to a boil and then add the white beans.
2. Let simmer for 20 minutes or until veggies are tender but firm. Test salt.
3. Add spinach and paprikas. Mix well. Boil 5 more minutes. Set aside.
4. Serve the soup in bowls, adding fresh parsley and a little olive oil on top.
