Autumn Pork Stew

This is a very nice and very tasty soup that is good in the winter time when you want comfort food. It's easy to make but so full of great flavors.
Ingredients:
2 tablespoons olive oil
1/2 pound pork cubed and diced
2 tablespoons flour
1 large garlic clove minced
1/2 cup chopped white onion
1 cup diced red bell pepper
1 cup diced mushrooms
3 tablespoons orange flavored liqueur
1 cup peeled and diced sweet potatoes
1 cup diced new potatoes
1/2 teaspoon orange rind grated
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup chicken broth
Directions:
1. Heat 1 tablespoon oil in nonstick skillet then dust pork with flour and brown 2 minutes per side.
2. Remove meat to dish then add remaining oil, garlic, onion and pepper then sauté 5 minutes.
3. Stir in mushrooms and sauté another 2 minutes.
4. Add liqueur to skillet and scrape up browned bits in skillet.
5. Add potatoes, orange peel, salt, pepper and broth then bring to boil and reduce heat to low.
6. Return pork to skillet and simmer covered until potatoes are tender about 20 minutes.
