Autumn Chicken and Butternut Squash Stew

awesome, healthy stew for fall
Ingredients:
1 tbsp olive oil
1 1/2 pounds chicken breast, skin removed
1 cup chopped onion
2 cloves garlic
1 cup chopped celery
28 oz diced tomatoes
1 cup chicken broth
6 oz beer
1/2 tsp salt
1/2 tsp pepper
1 tsp rubbed sage
1 tsp fresh thyme
2 tsp oregano
4 cups chopped butternut squash, peeled
1/2 cup frozen peas
Directions:
1. Used bone in chicken breast for more flavor. Heat oil in large pan brown chicken 15-20 minutes. Remove chicken and add onion, garlic and celery, saute on medium heat for five minutes. Cut up chicken and return to the pan with veggies. Add tomato, chicken broth, beer salt and other seasonings, bring to a boil and then simmer for 45 min's to an hour.
2. Add squash bring to a boil and simmer for 30 minutes or until squash is tender
