It was given to me by my brother- in-law who got it from his mother-in-law. This is a very special breakfast treat that takes some effort, but worth it. My kids love these and ask for them all the time.
Ingredients:
1 package dry active yeast
1/2 cup lukewarm water
1 1/2 cups milk
1 tbs. salt
2 tbs. sugar
2 3/4 cups flour
3 eggs (separated)
5 tbs. vegetable oil
1 cup sugar (to roll in when finished)
note: you can't make this unless you have an ableskiver pan
Directions:
1. This first part needs to be done the night before you want to make these:
2. Mix yeast with warm water and set aside
3. In a large glass or plastic bowl mix milk, salt, and sugar
4. Add yeast mixture and flour to milk mixture and mix well (you can do this by hand with a wisk or with a hand mixer on low speed)
5. Mix in egg yolks and oil
6. Cover with plastic wrap and place in fridge overnight
7. Do this in the morning:
8. Beat egg whites to almost stiff peak stage
9. Fold egg whites into refrigerated batter
10. Over medium heat, fill each cup in buttered ableskiver pan to just below full
11. Turn 1/4 of the way over with fondue fork, bamboo kabob stick, toothpick or whatever works for you (it takes some practice to know when these are ready to turn, in my experience they are ready to turn when the edges just start to separate from the sides of the pan)
12. Turn again the rest of the way over so that all sides are browned
13. Roll in sugar and enjoy
