The Aussie version of bacon & eggs is interesting because it's served with a side of baked beans. We were skeptical at first but really enjoyed the compliment they afforded the eggs & bacon. We used Bush's baked beans in original style for this recipe. Very delicious & we felt like it was a heartier breakfast than with just bacon & eggs. Recipe from Syrie Wongkaew on . Ingredients:
4 large eggs |
6 slices smoked bacon |
4 slices whole wheat bread |
1 (14 1/2 ounce) can baked beans |
butter (for toast) |
Directions:
1. Put baked beans in a medium pot, over medium heat and bring to a boil; reduce heat and simmer til serving time. 2. Meanwhile, fry the bacon until desired crispness and drain on paper towels. 3. Fry the eggs in the same pan used to fry the bacon. 4. Toast the bread and spread with butter. 5. Place one egg on top of each slice of toast and serve with bacon and beans on the side. |
