Auntie Kellie's Spicy Stuffing

Auntie Kellie's Spicy Stuffing
Ingredients:
1 lb celery, chopped
2 medium onions
1 lb spicy sausage
1 (10 1/2 ounce) can cream of mushroom soup or 1 (10 1/2 ounce) can cream of chicken soup
2 -3 cups milk
2 cups applesauce
1 orange (optional)
2 teaspoons sage
2 teaspoons poultry seasoning
1 (12 ounce) package pepperidge farm stuffing
1 teaspoon salt
1 teaspoon pepper
3 tablespoons butter
Directions:
1. In a large pan melt 3 Tbsp of butter over medium heat.
2. Add celery and onions. Sauté for 10-15 minutes. Remove and set aside for later.
3. Lightly brown sausage and drain.
4. Add sautéed celery/onion to sausage and cook for 5 more minutes on low heat.
5. Add can of soup and 2 cups of milk. Stir and cook about 5 minutes on low heat.
6. Ada 2 cups of applesauce and juice of 1 orange. Stir and heat.
7. Add sage and poultry seasoning, salt and pepper. Stir and heat on low.
8. Take off heat.
9. Add stuffing crumbs. Fold crumbs gently (do not stir). May need to add more. Ilk slowly if too dry.
10. Pre heat the oven to 350.
11. Butter 2 2qt baking dishes (best to use separate dishes for baking). Add stuffing mixture.
12. Bake for 45 minutes.
