Aunt Vics Cheesy Potatoes

These are a staple at our casual family get togethers...I took Aunt Vic's recipe and kicked it up a notch!
Ingredients:
2 lb frozen shredded hashed brown potatoes, thawed (i've never thawed them first)
1/2 c melted butter
1/2 c chopped onion (optional-i almost always use dried minced onion in this recipe)
1/2 c chopped red bell pepper (optional-i like to use a combo of whatever color peppers i have on hand...the more the better!)
1 tsp sea salt
1/4 tsp pepper
1-2 tsps garlic salt
1/2 tsp crushed red pepper
10 oz can cream of chicken soup (low fat, no problem)
1 c sour cream (i always use fat free w/excellent results)
2 c shredded cheddar cheese
Directions:
1. 1. Preheat oven to 350.
2. 2. Combine potatoes, butter, onions, peppers, salt, and pepper in bowl. Mix well.
3. 3. Add soup, sour cream, and cheese. Mix well.
4. 4. Pour into 9X13 baking dish (spray w/non stick cooking spray, first).
5. 5. Bake for 45 minutes.
