Bonnie writes: These are the best oatmeal cookies ever . I have to agree. Crispy edges, chewy center, great flavour. Everything a good cookie should be. From her book Friday Night Dinners. These are also great with chocolate chips in place of the nuts. Yummmm.
Ingredients:
1 cup butter or 1 cup margarine
1/2 granulated sugar
3/4 cup brown sugar, packed
1 egg
1/2 teaspoon vanilla bean paste or 1/2 teaspoon pure vanilla extract
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 cups rolled oats
1/2 cup walnuts, toasted and finely chopped (optional)
Directions:
1. In a large bowl, cream butter with both sugars. Beat in egg, vanilla and almond extracts.
2. In a separate bowl, combine flour, baking soda and salt.
3. Add flour mixture to the butter mixture, and stir Stir in oats and walnuts, if using.
4. Roll dough into small balls, about 1 tbsp each. Place balls on parchment lined baking sheets and press very flat with a fork or flat bottom of a glass dipped in flour.
5. Bake in a preheated 350*F oven for 8 - 12 minutes.
6. Cook on wire racks.
