I guess this is an ambrosia salad, we just always called it fruit salad. One of our family favorites. You can also add coconut (1/4 cup) if you like. If you have time, prepare this the day before and refrigerate. About 1 hour before serving, remove from refrigerator and let sit to come to room temperature. Stir to remix and serve. Prep time is cooking time.
Ingredients:
1 (8 ounce) can mandarin oranges
1 (8 ounce) can pineapple tidbits or 1 (8 ounce) can chunk pineapple
1 cup mini marshmallows
1/2 pint sour cream
1 cup chopped nuts
1 (8 ounce) jar maraschino cherries
1/4 cup shredded coconut (optional)
Directions:
1. Drain the juice from all the fruits; discard, or use for something else.
2. Put sour cream in bowl.
3. Add remaining ingredients in the following order, stirring to blend after each ingredient is added - pineapple, marshmallows, nuts, mandarin oranges, cherries. Add coconut last.
4. NOTE: Stir the mandarin oranges and maraschino cherries carefully, as they have a tendency to tear apart if mixed too hard.
