The cream cheese frosting is to die for!
Ingredients:
3 cups flour
2 cups sugar
2 teaspoons cinnamon
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1 1/2 teaspoons salt
1 (8 ounce) can crushed pineapple, drained
3 eggs
1 1/2 cups oil
2 teaspoons vanilla
2 cups grated carrots
4 ounces cream cheese
1/4 cup butter
1 teaspoon vanilla
0.5 (4 lb) box powdered sugar
Directions:
1. Mix flour, sugar, cinnamon, baking soda, baking powder, and salt. Make a well in the middle and put the eggs, oil, and vanilla in the center. Combine, then add the pineapple and carrots.
2. Bake at 325 degrees F for 60 minutes in a 9x13 pan.
3. For frosting, mix all ingredients until smooth. Wait for cake to cool, then spread on top.
