A family staple. My Great Aunt always made this for our (Irish)family gatherings. It is not a soda bread, but a simple raisin bread. I can imagine it as a special treat in the old days. There is minimal sugar. Read more . The plumped raisins sweeten the bread. Aunt Mary was a joy. She only had one arm, but always bought the walnuts in the shells (much cheaper) and would shell them herself! Can you imagine?
Ingredients:
3 cups flour
3 teaspoons baking powder
1/4 shortning
2 eggs beaten
1 cup milk
2 cups raisins, soaked in boiling water, then drained
1/2-1 cup chopped walnuts
cinnomon
sugar
nutmeg
Directions:
1. Preheat oven to 350 degrees
2. Measure out raisins and cover with boiling water
3. Combine flour and baking powder
4. Cut in shortning
5. Combine eggs and milk
6. Add wet to dry and mix, you may need to add a bit more milk
7. Batter will be thick
8. Drain raisins, fold into batter
9. Fold in walnuts
10. Spread batter into bundt pan
11. Sprinkle top with cinnomon, sugar and nutmeg
12. Bake at 350 for 40 minutes or until lightly browned
13. Remove from pan and slice
14. It is also good toasted with butter
