I got this recipe from my boss' aunt and love it! The recipe says that this fruit salad can also be made into fruit cups. I'm typing out the recipe as stated, but I drain the pineapple and mandarins when I make it and I also mix the strawberries in instead of using them as a garnish. Just a note, the jello is supposed to turn out medium consistency and the bananas will not brown because of the lemon!
Ingredients:
1 (3 ounce) package lemon jell-o gelatin
1 cup boiling water
1 (6 ounce) can frozen orange juice concentrate, undiluted
1 (20 ounce) can pineapple tidbits in juice
1 (11 ounce) can mandarin oranges in juice
3 bananas, sliced
1 cup fresh green seedless grape, halved
1 cup fresh strawberries, sliced
Directions:
1. In a large bowl, dissolved jello in boiling water. Add frozen orange juice concentrate and stir well. Allow to cool slightly.
2. Add pineapple, oranges, bananas, and grapes. Stir gently.
3. Chill several hours or overnight tightly covered.
4. Add the sliced strawberries the day the fruit salad is to be served.
