A turn of the century pound-cake recipe from my Aunt Lena Dulworth. It is an heirloom recipe. Although it is named for my Aunt Lena Dulworth, I understand she got it from her grandmother.Pound-cake derives its name from the the fact that it usually had about a pound of each ingredient.
Ingredients:
1 lb. butter
2 2/3 cups sugar
3 1/2 cups flour
8 medium eggs
8 t. half & half cream
1 t. vanilla (i often add much more)
note: i don't know how my aunt lena did it without electricity and an electric mixer in her youth. i say an electric mixer is a must
Directions:
1. Separate eggs.
2. Beat egg whites with 6 T. of the above sugar.Set aside in refrigerator.
3. Cream butter and sugar in electric mixer till light.
4. Add yolks (2 at a time).
5. Add flour and cream alternately.
6. Beat until as light and fluffy as possible.
7. Add vanilla.
8. Add egg whites to mixture using low speed of mixer.
9. Mix well. Pour batter into lightly greased tube pan.
10. Bake 325 degrees for 1 hour and 25 minutes.
11. Note! Cake should fall.
