Aunt Georgia's Gumdrop Cake

There are 15 other Gumdrop Cake recipes on Zaar as of today, but not this winner from my Aunt Georgia. She used to make this for my favorite uncle and his brother, my dad. This was BY FAR my dad's all time favorite cake! Not diet friendly, but really delicious and fun for a once-in-awhile treat. You can replace some ingredients with better choices and clean up the calories and fat quite a bit (but I don't!). This makes two loaves or one large bundt cake, or you can make mini loaves which are wonderful as gifts. Great for holiday time, a little spicy and lots of color. Enjoy!
Ingredients:
2 cups butter or 2 cups margarine
1 cup sugar
1 cup brown sugar
4 eggs
4 cups flour
1 teaspoon allspice
1 teaspoon cinnamon
1/2 teaspoon baking powder
2 teaspoons baking soda
2 cups applesauce
2 cups gumdrops
1 cup nuts, chopped (optional)
Directions:
1. Remove black gumdrops if you don't like them (I use them). Toss gumdrops in a little flour before using. This keeps them from dropping to the bottom of the cake.
2. Warm the applesauce in the microwave until just a bit hot, not REALLY hot. Stir in the baking soda and allow it to dissolve. Allow to cool a bit.
3. Cream together: butter/margarine, sugars and eggs. Mix in applesauce with baking soda.
4. In separate bowl, combine flour, allspice, cinnamon and baking powder. Add to creamed mixture along with floured gumdrops and nuts and stir in until incoporated.
5. Grease two loaf pans or one bundt pan (9 inches at least). Add batter and bake in preheated 300 degree oven for 1.5 to 2 hours until done. Cake is done when a toothpick inserted in center comes out with little specks of cake, but not doughy.
