Aunt Evelyn's Meatloaf

Ingredients:
1 1/2 pound(s) ground chuck
1 teaspoon(s) salt
1/4 teaspoon(s) fresh ground black pepper
1/2 cup(s) dried breadcrumbs
1/2 cup(s) rolled oats, uncooked (or quick or old-fashioned)
1/4 cup(s) ketchup
1/2 medium onion (or 1-2 tsp onion flakes) finely chopped
1/2 medium bell pepper finely chopped
1 cup(s) grated cheese - your favorite
1 large egg lightly beaten
1/3 cup(s) milk
1/4 cup(s) ketchup
1/4 cup(s) bbq sauce
1 tablespoon(s) cider vinegar
1/4 teaspoon(s) worchestershire sauce
2 tablespoon(s) brown sugar
Directions:
1. - Preheat over to 350 degrees F.
2. - Line a shallow 9x13 inch baking pan with foil or parchment paper.
3. - Combine all meatloaf ingredients in large bowl and mix lightly until throughly combined.
4. - Place mixture in middle of prepared baking pan and form into a 9x5 inch oval loaf.
5. - Make an indentation along top center of loaf.
6. -In a small bowl, whisk together all topping ingredients until well combined.
7. - Cover meatloaf completely with topping.
8. - Bake, uncovered for about 1 1/4 hours or until meat is no longer pink and reads 160 degrees F on a thermometer.
9. - Let stand for 15 minutes.
