A delicious, and easy-to-make bread pudding that will remind you of yesteryear... came from my very dear departed Aunt Esther.
Ingredients:
3 cups soft breadcrumbs (can use 3 cups of soft bread cubes instead)
2 cups milk
1/4 cup butter
1/2 cup sugar
2 eggs, slightly beaten
1 teaspoon cinnamon
1/2 cup raisins (optional)
Directions:
1. Heat oven to 350 degrees. Place bread crumbs in 1-1/2 quart baking dish. Scald 1/4 cup butter in 2 cups milk. Blend in all remaining ingredients (the scalded milk/butter mixture, the sugar, the eggs, cinnamon and raisins) in the baking dish. Place baking dish in pan of hot water (with water 1 inch) deep) in the preheated oven. Bake for 40 to 45 minutes, or until a butter knife inserted 1 inch from the edge comes out clean. Serve warm with milk or cream if desired.
