An old family recipe, from my mother’s Aunt Alma – I love the flavor the almond extract gives these. You can add finely diced almonds to the batter, if you really want to go with the almond flavor. I had to share this “oldie but goodie”! Read more !
Ingredients:
1 cup white sugar
1 cup powdered sugar
1 cup butter, softened
1 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
41/4 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1/2 teaspoon salt
Directions:
1. Cream together both sugars, butter and oil.
2. Stir in eggs, and both extracts, mixing well.
3. In a separate bowl, stir remaining dry ingredients together to mix well; stir into creamed mixture until thoroughly blended.
4. Roll dough into balls and place on lightly greased cookie sheet.
5. Press each ball down with your fingertips (my mom would use a potato masher to give the tops of the cookies a pretty pattern).
6. Bake at 350 degrees for about 10 minutes, until just barely brown around the outer edges.
7. Remove cookies from pan to waxed paper to cool completely before storing.
