Tasty soup made with canned or frozen pumpkin. Use homemade chicken broth for a low sodium soup perfect as a first course or lunch.
Ingredients:
2 cups pumpkin, mashed
2 cups chicken broth, no salt added
1/2 cup onion, chopped fine
1/4 cup cream
Directions:
1. Stir the pumpkin and chicken broth with a whisk until smooth. Cook the onions in a non-stick skillet prepared with cooking spray. Add onions to the soup and bring to a boil. Turn heat down and simmer 10 minutes. Stir the cream into a small amount of the soup, then add it back to the pan. Don not boil or it will separate. Serve immediately.
