Aubergines With Cheese

an easy dish for those aubergine lovers out there lol
Ingredients:
2 large aubergines
1 lb tomatoes
1 onion
5-7 tbl spoons olive oil or a really good glug for the more experienced cook
175g/6oz kosher dutch or cheddar cheese thinly sliced
salt and ground black pepper
Directions:
1. slice aubergines into 1cm/ 1/2 inch rounds
2. sprinkle them with salt and leave to drain for 30min.
3. rinse well and pat dry
4. meanwhile place the tomatoes in a bowl and cover with boiling water
5. leave for 3 or 4 min or till they are easy to peel
6. peel and chop
7. slice onions and gently fry till golden, set aside
8. gently brown aubergines
9. preheat oven to 190C/375F/gas 5
10. oil a casserole dish and begin with a layer of aubergine
11. sprinkle some onion
12. then tomatoes and then cheese
13. cont with layers ending with a layer of cheese
14. bake for 30-40min or until the cheese is brown and bubbly
