Aubergine and Hommus Grills

An easy vegetarian meal.
Ingredients:
2 aubergines, thickly sliced lengthways
2 teaspoons vegetable oil, plus extra for brushing
3 slices bread, crusts removed, any type
300 g hummus
Directions:
1. Lay aubergine slices flat on baking sheet.
2. Brush with oil and season.
3. Grill 15 minutes, turning twice, brushing with oil till slices are softened and cooked through.
4. Meanwhile whizz bread into crumbs.
5. Add 2 tsp oil, whizz again.
6. Spread some hommus on each eggplant slice.
7. Tip breadcrumbs onto plate.
8. Press hommus side of aubergine into crumbs to coat.
9. Grill again, hommus side up till golden -about 3 or 4 minutes.
