ASPARAGUS WITH VINAIGRETTE This recipe comes from my personal collection. This is a recipe I make often especially at Easter and Christmas. Tried and true and loved by all. Enjoy.
Ingredients:
2 pounds fresh asparagus spears washed and trimmed
4 tablespoons olive oil, divided
2 tablespoons fresh lemon juice
2 teaspoons spicy mustard
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
12 grape tomatoes cut in half
1/4 cup grated parmesan cheese
Directions:
1. Stir fry asparagus in 1 tablespoon olive oil until tender crisp.
2. Combine 3 tablespoons olive oil, lemon juice, mustard, salt and pepper in jar with lid.
3. Shake jar to blend ingredients well.
4. Place asparagus in a shallow bowl or serving platter.
5. Just before serving top with grape tomato halves then add vinaigrette dressing.
6. Sprinkle with grated parmesan cheese.
