Asparagus With Thyme Couscous Stir Fry

This dish is a really delicious way to use leftover veggies you bought at last week's farmer's market and can't quite bring yourself to eat raw. Also, this dish will make you realize how delicious thyme is in case you weren't aware.
Ingredients:
asparagus
olive oil
sea salt
thyme
various vegetables (leftover corn on the cob works well)
couscous
Directions:
1. Begin cooking couscous however you like (I just followed the directions on the package)
2. Wash asparagus, trim off the ends, and arrange in an oven-proof pan.
3. Drizzle with olive oil and sprinkle on some sea salt and thyme.
4. Roast for 40 minutes at 375F
5. Mix couscous and some oilve oil in a stir fry pan.
6. Stir in various vegetables, we used left-over corn and the roasted asparagus, chopped up.
7. Add a little bit more thyme.
