Great side dish of Asparagus with crushed pine nuts.
Ingredients:
1 1/2 lbs asparagus
2 tablespoons olive oil
lemon juice
salt and pepper
1/4 cup pine nuts
2 teaspoons parmesan cheese (grated)
Directions:
1. Prepare asparagus by snapping off tough ends and rinsing under cool water. Steam until bright green and still slightly crisp, about 5 minutes.
2. Toss in olive oil and sprinkle with lemon, salt, and pepper to taste. Garnish with pinenuts and Parmesan cheese.
