Asparagus With Hollandaise Sauce

This is a classic and not as hard to handle as many people think. Practice makes perfect. Combine with a poached egg and a slice of ham and you have a wonderful Spring breakfast. Mmmmmm
Ingredients:
1 lb trimmed fresh asparagus
1/2 cup butter
3 large egg yolks
1 tablespoon plus 1 teaspoon of lemon juice
1/8 teaspoon salt
dash cayenne pepper or hot pepper sauce
2 tablespoons hot water
finely chopped fresh parsley, if desired
Directions:
1. Steam asparagus until tender crisp.
2. Set aside and keep warm but not overcooked.
3. Make Hollandaise Sauce.
4. Heat butter in a heavy saucepan until hot and foamy, but not browned.
5. In a small bowl, whisk or beat egg yolks with lemon juice, salt, and cayenne pepper or hot sauce.
6. Gradually beat in butter, then water.
7. Return mixture to saucepan and beat over very low heat until mixture is slightly thickened.
8. Serve immediately or let stand over warm water for up to 30 minutes.
9. If desired, sprinkle with chopped fresh parsley before serving over your steamed asparagus..
10. Makes about 2/3 cup of hollandaise sauce.
