ASPARAGUS WITH HARD COOKED EGGS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gonzalez Estate in Mesquite, Texas in 1987.
Ingredients:
2 pounds thin asparagus
1 hard cooked egg shelled and chopped fine
1 tablespoon finely chopped fresh parsley leaves
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons unsalted butter melted
Directions:
1. Snap off ends of the asparagus then place asparagus tips in large skillet and cover with water.
2. Turn heat to high then bring water to a boil and cook asparagus tips 25 minutes.
3. Drain and arrange them on an oval platter with all the tips pointing in one direction.
4. Sprinkle asparagus with chopped egg and parsley then season with salt and pepper.
5. Pour butter over everything and serve immediately.
