ASPARAGUS WITH BALSAMIC DRIZZLE AND CREAM CHEESE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cannon Estate in Addison, Texas in 1990.
Ingredients:
1-1/2 pounds medium size asparagus ends snapped and stems peeled
1/4 cup balsamic vinegar
1 tablespoon soy sauce
3 tablespoons brown sugar
2 cloves garlic minced fine
1 green onion sliced fine
1 small baguette sliced into 1-1/2” slices
8 ounces softened cream cheese
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh tarragon
6 radishes washed and sliced thinly
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. In steamer basket over boiling water steam asparagus 5 minutes.
2. Rinse immediately under cold water then set aside until ready to use.
3. For sauce combine vinegar, soy sauce, brown sugar and garlic in a small saucepan.
4. Add 2 tablespoons water then cook over medium heat until reduced by half.
5. Add green onion then adjust seasoning if necessary.
6. In small bowl combine cream cheese, chives and tarragon.
7. In toaster oven or under a broiler toast one side of each of the baguette slices.
8. Spread each with a small amount of the cream cheese mixture.
9. Season with salt and freshly ground pepper and top with radish slices.
10. On large platter arrange asparagus then drizzle with vinaigrette.
11. Arrange baguette slices with cheese near the asparagus.
