I made this when I had some veggies to use up, and it turned out pretty good! All measurements are approximate, as I never measure. :) I like to make this in the evening for lunch the next day.
Ingredients:
4 ounces angel hair pasta (i prefer whole grain or wheat)
10 asparagus spears, cut in bite-sized pieces
1 tomato, cut in bite-sized pieces
1/2 carrot, shredded
1/2 red onion, diced
1/4 cup fresh basil, chopped
2 tablespoons extra virgin olive oil
1/4 cup balsamic vinegar
1/2 lemon, juice of
garlic, to taste
salt and pepper, to taste
grated parmesan cheese (optional) or romano cheese (optional) or asiago cheese (optional)
Directions:
1. Cook pasta according to package directions.
2. Steam or sauté asparagus until just tender; rinse with cold water.
3. Sauté onion and carrot with garlic until tender, about three minutes.
4. Add vegetables, oil and basil to pasta. Add remaining ingredients incrementally, to taste.
5. Sprinkle with cheese, if desired. Enjoy warm or chilled.
