Not everyone loves asparagus, but if you have it in the garden you can use this recipe to please almost everybody!
Ingredients:
1-1/2 pounds fresh asparagus, trimmed
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup half-and-half cream
1/2 teaspoon chicken bouillon granules
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
1/2 cup shredded swiss cheese
2 tablespoons crushed butter-flavored crackers, such as ritz or townhouse
Directions:
1. In a skillet, cook asparagus in a small amount of water until crisp-tender, only about 5-7 minutes.
2. Drain.
3. Arrange asparagus spears in the bottom of a greased 1-1/2 quart baking dish. Set aside and keep warm.
4. In a small saucepan, melt butter over low heat.
5. Add flour, whisk and cook for 1 minute.
6. Whisk in the cream, bouillon, nutmeg and salt.
7. Bring to a boil over medium heat.
8. Cook and stir for about 2 minutes.
9. Remove from heat.
10. Stir in cheese until melted.
11. Pour over asparagus.
12. Sprinkle with cracker crumbs.
13. Broil about 6 inches from heat for 3-5 minutes or until lightly browned.
