Asparagus Crepes With Cheese Sauce

These are so good. Requires a little effort but they are so elegant and so impressive. I usually make these for special holiday meals. In fact, I will be making these Sunday for Easter. I hope you enjoy as much as we do.
Ingredients:
32 stalks asparagus
16 crepes
cheese sauce
4 tablespoons butter or margarine
4 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/4 teaspoon pepper
2 cups milk
1 cup shredded cheddar cheese
Directions:
1. Wash asparagus in cold water then break stalks down as far as they are tender.
2. Discard tough portions.
3. Cut stalks in half and cook in 1/2” boiling salted water until crisp-tender about 10 minutes.
4. Drain thoroughly.
5. Melt butter and flour together stirring constantly.
6. When thick add seasonings.
7. Slowly add milk stirring constantly until smooth.
8. Add cheese and stir over low heat until melted and smooth.
9. Arrange 4 half stalks of cooked asparagus in center of each crepe.
10. Fold sides over middle.
11. Put in butter shallow baking pan.
12. Pour cheese sauce over and bake at 350 for 20 minutes.
