Asparagus, Cheddar, Potato Soup

A simple and quick recipe for those who liked cheese & asparagus..
Ingredients:
150 g asparagus raw
180 g potato raw
60 g white onion
4 clove garlic
100 g cheddar cheese
100 ml 1% fat milk
1 1/2 tsp light sour cream
600 ml chicken broth
Directions:
1. Chop asparagus, onions, potato & garlic into little piece.
2. Boil all the above in the chicken broth until soft.
3. Puree the whole mixture.
4. Return mixture to pot and simmer.
5. Add shredded cheddar cheese into pot and stir to melt.
6. Add light sour cream.
7. You may want to add a little salt & pepper or some herbs to enhance the taste.
8. bring to boil. Then serve hot or pack into freezer for future use.
9. To reheat, thaw then microwave at high power for about 2 minutes.
