A basic, creamy, smooth broth of asparagus and chicken stock.
Ingredients:
6 cups stock, chicken
1-1/2 cups asparagus; trimmed
1/2 teaspoon salt
1 bay leaf
4 parsley branches
1 cup leek greens; chopped
1 carrot; peeled, chopped
1 celery stalk; chopped
Directions:
1. Use lower ends and trimmings of 1 lb of fresh asparagus. Roughly chop them into 1 pieces.
2. Combine the rest of the broth ingredients in a pot, bring to a boil, simmer 20-25 minutes, and then strain.
3. Refrigerate until needed.
