Asian Zucchini Yellow Squash Salad

Great summer side dish with simple grilled meats
Ingredients:
2 medium zucchini
2 medium yellow squash
3 tablespoons soy sauce or 2 tablespoons tamari
2 tablespoons rice wine vinegar
1 tablespoon dark sesame oil
1/4 teaspoon sugar
1/4 teaspoon red pepper flakes (or to taste)
1 teaspoon toasted sesame seeds
Directions:
1. Peel long ribbons of the zucchini and squash, or use a mandolin to create long noodles.
2. In a large bowl, whisk together remaining ingredients.
3. Add the zucchini and squash and toss to mix well. Season to taste with salt or added soy, and freshly ground pepper.
4. Serve immediately, or allow to marinate for up to 2 hours in the fridge.
