a nice stew that is low in calories.
Ingredients:
5 cups vegetable stock
1 small onion, diced
2 garlic cloves, minced
2 tablespoons soy sauce
1/4 cup spinach, chopped
1 cup broccoli floret
1 cup carrot, diced
1 cup mushroom, sliced
1/2 cup peas
1/2 cup water chestnut, chopped
1/2 cup soba noodles, broken
1/2 cup tofu, cubed
Directions:
1. brown onions and garlic in large pot.
2. Add stock and soy sauce and bring to a boil.
3. Add remaining vegetables and bring to a simmer.
