Another take on coleslaw with out mayonaise. This is great the next day, the veggies are still crunchy.
Ingredients:
2 cups napa cabbage shredded
2 cups carrots julianned
1 cup zuchinni julianned
1 cup red bell pepper julianned
1/2 cup cucumber julianned
1 medium shallot or red onion halved and sliced thinly
1/2 cup roughly chopped cilantro
dressing
1/3 cup rice wine vinegar
3 tbsp white balsamic vinegar
1 tbsp siricha sauce, or any asian style hot sauce
1/8 tsp of white pepper
1 tsp salt
1/2 tsp sesame oil
3/4 cup vegtable oil
Directions:
1. Combine dressing in a small bowl and set aside. Tast for salt.
2. Shred and juliane vegtables into a large salad bowl. Toss. Pour dressing over top and toss, taste for salt and pepper.
