a very good use for leftover shrimp cocktail. bright and full of flavor simple and delicious
Ingredients:
2 # cooked peeled and deveined shrimp,chilled, roughly chopped( chunky)
2 large carrots shredded
1/2 cup cilantro
4 scallions cut on a bias
10 wonton skins, julienned and fried
1 package bean thread noodles, soaked ( 4minutes cold water) drained and fried
1 clove garlic minced( please use fresh not the jarred kind)
2 tbl. fresh ginger minced or grated on ginger grater
1/4 cup soy sauce
1/4 cup honey
juice and zest of 2 limes
1 tbl. sesame oil
2 tbl. vegetable oil
Directions:
1. combine all ingredients except for the shrimp and fried items
2. toss shrimp
3. top with the fried items
4. serve immediately
