i created this after my fiancé and i had a wonderful salad at a chinese restaurant. prep times don't include chopping & shredding (i use my magic bullet!)
Ingredients:
4 tablespoons water
3 tablespoons sesame oil
1 tablespoon rice vinegar
1 teaspoon curry powder
1 1/2 teaspoons soy sauce
5 teaspoons sugar
1 teaspoon satay sauce
1 dash salt
1 dash pepper
2 -180 g mung beans, canned, drained
35 g carrots, shredded
70 g onions, chopped
Directions:
1. combine all dressing ingredients, stir well.
2. add onion, carrots, & beans, mix well & serve!
