Asian Noodles With Lime Peanut Sauce

Prepare as written or add cubed or shredded chicken or shrimp for an easy, inexpensive one-dish meal.
Ingredients:
12 ounces linguine
2 cups broccoli florets
2 cups snow peas, trimmed
2 cups sugar snap peas, trimmed
1/2 cup unsalted peanuts
1/2 cup creamy peanut butter
1/4 cup low sodium soy sauce
1/4 cup water
2 tablespoons rice vinegar
2 tablespoons fresh lime juice
1 scallion, sliced in 3/4 inch pieces
1 tablespoon fresh ginger, grated
2 tablespoons brown sugar, packed
1/4 teaspoon red pepper flakes
Directions:
1. Cook pasta according to package directions, drain and rinse under cold water.
2. Meanwhile, steam broccoli about 3 minutes. Add snow peas and sugar snap peas and steam an additional 2 minutes, until all veggies are crisp tender.
3. Toast peanuts in a dry skillet over medium high heat, about 3 to 5 minutes, stirring.
4. Make a sauce by combining peanut butter, soy sauce, water, vinegar, lime juice, scallions, ginger, brown sugar and red pepper flakes until smooth.
5. Toss the pasta with the vegetables and then toss in the peanut sauce. Coarsely chop the toasted peanuts and sprinkle over each bowl. Serve.
