Asian Noodle Salad

The dressing for this is tangy. Pretty salad. You can add whatever Asian vegetables you have on hand (bok choy, carrots, onions…) Top with sesame seeds if you want.
Ingredients:
8 ounces spaghetti
1/2 lb shiitake mushroom (dried works, just rehydrate them first)
1 bell pepper, thinly sliced
1/4 cup rice vinegar
1/4 lb firm tofu, diced
6 teaspoons soy sauce
3 teaspoons peanut oil
1 teaspoon grated ginger
Directions:
1. Cook the pasta. Slice mushrooms. Add mushrooms and peppers to the pasta water in the last 2 minutes of cooking. Drain.
2. In a small bowl, mix dressing ingredients. Transfer pasta to serving bowl. Add the tofu. Pour dressing over and toss to coat.
3. Serve hot or cold.
