The dressing for this is tangy. Pretty salad. You can add whatever Asian vegetables you have on hand (bok choy, carrots, onions…) Top with sesame seeds if you want. Ingredients:
8 ounces spaghetti |
1/2 lb shiitake mushroom (dried works, just rehydrate them first) |
1 bell pepper, thinly sliced |
1/4 cup rice vinegar |
1/4 lb firm tofu, diced |
6 teaspoons soy sauce |
3 teaspoons peanut oil |
1 teaspoon grated ginger |
Directions:
1. Cook the pasta. Slice mushrooms. Add mushrooms and peppers to the pasta water in the last 2 minutes of cooking. Drain. 2. In a small bowl, mix dressing ingredients. Transfer pasta to serving bowl. Add the tofu. Pour dressing over and toss to coat. 3. Serve hot or cold. |
