Asian Lettuce Wraps

Ingredients:
1 tablespoon plus 1 teaspoon reduced-fat chunky peanut butter
1 1/2 teaspoons honey
1 1/2 teaspoons cider vinegar
1/4 teaspoon curry powder
1 1/2 teaspoons low-sodium soy sauce
1/8 teaspoon ground red pepper
2 cups preshredded coleslaw mix
4 thin slices deli-style turkey breast
4 leaves iceberg lettuce or napa cabbage
Directions:
1. Combine first 6 ingredients in a medium bowl; stir well. Add coleslaw mix; toss to coat.
2. Place one slice of turkey on each lettuce leaf; top with 1/2 cup coleslaw mixture. Roll up; secure each end with a wooden pick. Cut each wrap in half diagonally.
