Asian Lettuce Wraps

These sound simple and yummy. From Cooking Light 15 Minute Cookbook.
Ingredients:
1 tablespoon reduced-fat crunchy peanut butter
1 teaspoon reduced-fat crunchy peanut butter
1 1/2 teaspoons honey
1 1/2 teaspoons cider vinegar
1 1/2 teaspoons low sodium soy sauce
1/4 teaspoon curry powder
1/8 teaspoon ground red pepper
1 (16 ounce) package coleslaw mix
4 leaves iceberg lettuce (chinese) or 4 leaves napa cabbage (chinese)
4 thin slices deli turkey
Directions:
1. Combine first 6 ingredients in a medium bowl; stir well.
2. Add coleslaw; toss to coat.
3. Place one slice of turkey on each lettuce leaf; top with 1/2 cup coleslaw mixture.
4. Roll up; secure each end with a wooden pick.
5. Cut each wrap in half diagonally.
6. Yield: 4 servings (serving size: 2 halves).
