ASIAN CUCUMBER SALAD WITH SESAME This recipe came from an estate sale. I obtained it when I purchased the family collection from the Washington Estate in Spring, Texas in 1990.
Ingredients:
3 medium cucumbers peeled halved lengthwise seeded and cut on the diagonal 1/4 thick
1 tablespoon kosher salt
2 tablespoons rice vinegar
2 tablespoons toasted sesame oil
1/2 teaspoon granulated sugar
1/4 teaspoon hot red pepper flakes
1 tablespoon sesame seeds toasted in a dry skillet until golden brown
Directions:
1. Toss cucumbers and salt in a large strainer or colander set over a bowl.
2. Fill a gallon size zipper lock plastic bag with ice water and set the bag on top of cucumber slices.
3. Drain for 1 hour.
4. Meanwhile whisk vinegar, oil, sugar and pepper flakes together in a small bowl.
5. Set dressing aside stirring occasionally until the sugar dissolves.
6. Thoroughly rinse the cucumber slices under cold running water and pat dry with paper towels.
7. Toss cucumbers with dressing and toasted sesame seeds then serve immediately.
