My family's favorite way to eat fresh cucumbers, we can't wait to have this all summer long every year!
Ingredients:
3/4 cup seasoned rice vinegar
1/4 cup water
1 tablespoon sugar
1 tablespoon minced garlic
1 tablespoon light soy sauce
1 teaspoon sesame oil
1/2 teaspoon fresh ground pepper
2 large cucumbers, peeled and sliced
Directions:
1. Stir together first 7 ingredients in a large bowl.
2. Add cucumbers, tossing to coat.
3. Cover and chill 1 hour.
