Asian Cucumber Peanut Salad

This is a fresh and delicious asian salad from Sarah :).
Ingredients:
1 head bok choy, chopped
1 cucumber, peeled and seeded or one papa (large papaya), sliced
1/2 lb green beans, cleaned and blanched
1/4 c cilantro
2 green thai chiles, sliced
1/4 c lime juice
2 tbls fish sauce
2 tsp brown sugar
3/4 c roasted peanuts
2 green onions, sliced
Directions:
1. Combine the lime juice, fish sauce, brown sugar and chiles in a bowl for dressing.
2. Combine chopped bok choy, cucumber or papa, green beans, cilantro and chiles on salad platter.
3. Add roasted peanuts and green onions
4. Toss with dressing.
5. Serve.
