This is a nice topper for crackers and tastes like an Asian bite of flavor. Easy to make and is a fun addition to your appetizer rotation. Ideal for guests and can use chicken you may have left over. No cook but easy to put together. Originally a recipe from Kraft. I find the Marie's brand dressing really makes this appetizer pop but you can make homemade dressing as well. Enjoy! ChefDLH
Ingredients:
1 skinless chicken breast half, cooked, thinly sliced (6 oz.)
30 ritz crackers
1 cucumber, cut into 30 thin slices, cut in half
2 tablespoons asian dressing sesame with ginger
1 green onion, sliced
1 tablespoon finely chopped honey roasted dry roasted peanuts
Directions:
1. CUT chicken into 30 pieces.
2. Top crackers with cucumber and chicken.
3. Drizzle with dressing.
4. Top with remaining ingredients.
